6-Gingerol是新鲜姜的活性成分。从化学上讲，姜辣素是辣椒素和胡椒碱的近亲，这两种化合物赋予了辣椒和黑胡椒各自的辣味。6-Gingerol经腹腔注射诱导大鼠体温过低。姜辣素似乎对类风湿关节炎的动物模型有效。人们对姜辣素对肠道、乳腺组织、卵巢、胰腺等组织的癌性肿瘤的作用进行了研究，并得出了积极的结果。
